Italian Sausage and Pepper Subs

Deli Cole Slaw

What you need:
* 1 lb. sweet or hot Italian sausage links
* 1 red bell pepper, seeded and sliced into 1/4-in. strips
* 1 green bell pepper, seeded and sliced into 1/4-in. strips
* 1 Tbsp. olive oil
* 1 garlic clove, minced
* 2 large sweet onions, peeled and thinly sliced
* 4 sub rolls, sliced lengthwise and toasted,
* prepared Italian dressing, if desired
What to do:
1. Grill sausages over hot coals, turning occasionally, until done, about 10 minutes. Remove from grill and keep warm.
2. Meanwhile, in large skillet, sauté peppers in the olive oil until softened, about 5 minutes.
3. Add the onions and garlic, season with salt and pepper and continue cooking, stirring frequently, until vegetables are lightly browned, 10 minutes. (Pepper mixture can be made ahead; reheat to serve or serve at room temperature.)
4. Place sausage links in sub rolls.
5. Generously add sautéed pepper mixture to each sandwich. Top with Italian dressing.

* Serving Suggestions: These hearty and simple sandwiches are a street fair favorite, which can be enjoyed at home. Serve with creamy cole slaw, assortment of sweet, hot and dill pickles, chips and watermelon wedges.
